  • Prepare the Dough:
    • In a large mixing bowl, combine flour, egg, salt, and oil.
    • Use your hands to form the mixture into a ball of dough.
    • Cover and let the dough rest for 1 hour.
  • Make the Filling:
    • In a separate bowl, mix ricotta, Gruyere, Parmesan, eggs, and parsley.
    • Season with a pinch of nutmeg, salt, and pepper. Stir until well combined.

    • Lay the second sheet of dough over the first, pressing down gently around each mound of filling to seal.
    • Use a pizza cutter to cut the dough into squares, creating individual ravioli.
  • Cook the Ravioli:
    • In a large pot, bring chicken stock (or salted water) to a boil.
    • Carefully add the ravioli, boiling for 3–5 minutes or until tender and cooked through.
  • Serve:
    • Drain the ravioli and transfer to a serving dish.
    • Drizzle with melted butter and sprinkle with extra Parmesan cheese.
    • Toss gently and serve hot. Enjoy!
