A Refreshing Drink To Welcome You All

  • Prep the Ingredients
    • Pick fresh mint leaves and rinse under running water.
    • Clean and grate the ginger.
    • Juice the lemons and set aside.
  • Make the Sugar Syrup
    • In a medium pot, heat water and add sugar. Stir until the sugar dissolves completely.
    • Strain the syrup through a thin muslin cloth to remove any impurities, then return it to the pot.
  • Thicken the Syrup
    • Continue boiling the syrup on medium heat for about 20 minutes, until it thickens slightly. Remove from heat and allow it to cool.
  • Infuse the Flavors
    • Once the syrup is cool, add the mint leaves, grated ginger, and lemon juice. Let this sit for 4-5 hours so the mint and ginger flavors infuse into the syrup. Add a drop of green food coloring if you’d like a vibrant color.
  • Store and Serve
    • Pour the mint concentrate into a clean glass bottle for storage.
    • To serve, add about 1 tablespoon of the concentrate to a glass, dilute with water to taste, and top with crushed ice. Enjoy your refreshing minty-lemon drink!
