A Refreshing Drink To Welcome You All
- Prep the Ingredients
- Pick fresh mint leaves and rinse under running water.
- Clean and grate the ginger.
- Juice the lemons and set aside.
- Make the Sugar Syrup
- In a medium pot, heat water and add sugar. Stir until the sugar dissolves completely.
- Strain the syrup through a thin muslin cloth to remove any impurities, then return it to the pot.
- Thicken the Syrup
- Continue boiling the syrup on medium heat for about 20 minutes, until it thickens slightly. Remove from heat and allow it to cool.
- Infuse the Flavors
- Once the syrup is cool, add the mint leaves, grated ginger, and lemon juice. Let this sit for 4-5 hours so the mint and ginger flavors infuse into the syrup. Add a drop of green food coloring if you’d like a vibrant color.
- Store and Serve
- Pour the mint concentrate into a clean glass bottle for storage.
- To serve, add about 1 tablespoon of the concentrate to a glass, dilute with water to taste, and top with crushed ice. Enjoy your refreshing minty-lemon drink!
