Almond Rainbow Cake
- Prep the Dry Ingredients:
- In a large mixing bowl, combine all dry ingredients and whisk together until well blended.
- Add Wet Ingredients:
- Add the remaining ingredients to the bowl and beat the mixture for 2 minutes until smooth and fully combined.
- Pour and Tap:
- Pour the batter into greased and floured cake pans, filling each pan just over halfway. Lightly tap each pan on the counter to release any air bubbles.
- Bake:
- Preheat oven to 325°F (165°C). Place pans in the oven and bake until a toothpick inserted in the center comes out clean.
- Note: Baking times will vary depending on pan size. Cupcakes may take around 20–25 minutes, while larger pans (e.g., 14-inch rounds) may take closer to 45–55 minutes. Check regularly to avoid over-baking.
- Cool and Serve:
- Allow cakes to cool in the pans for about 10 minutes, then turn out onto wire racks to cool completely. Enjoy!
