Apple Cheddar Palmiers

  • Prepare the Filling:
    • Preheat a skillet over medium-high heat. Melt butter and sauté the apples and shallots for 3-5 minutes, until softened.
    • Add nutmeg, salt, and pepper to taste, and stir to combine. Remove from heat and set aside to cool slightly.
  • Prepare the Puff Pastry:
    • Lay each sheet of puff pastry on its own piece of parchment paper and gently roll out to smooth the surface.
    • Evenly distribute the apple mixture on top of both pastry sheets, then sprinkle with shredded cheddar cheese.
  • Form the Palmiers:
    • Fold each side of the pastry inward (about 1-2 inches), then fold each side again to meet in the middle.
    • Fold one more time to form a tight roll. Wrap the rolls in parchment paper and refrigerate for at least 30 minutes to chill (or longer if prepping ahead).
  • Bake the Palmiers:
    • Preheat the oven to 450°F (232°C). Line a baking sheet with parchment paper.
    • Carefully slice each chilled roll into 12-15 slices and place them flat on the prepared baking sheet.
    • Whisk the egg and brush it over the tops of the palmiers.
  • Bake and Serve:
    • Bake for 12-14 minutes, or until golden and puffed. Allow them to cool slightly before serving.
