Apple Pie Bars
- Preheat Oven & Prepare Pan:
- Preheat your oven to 350°F (175°C).
- Spray a 9×13-inch baking dish with non-stick cooking spray and set aside.
- Mix Wet Ingredients:
- In the bowl of an electric mixer, combine the oil, eggs, and sugar. Beat on medium speed until thoroughly blended.
- Combine Dry Ingredients:
- In a separate bowl, sift together the flour, baking powder, salt, baking soda, and spices (such as cinnamon and nutmeg).
- Create the Batter:
- Gradually add the dry ingredients to the wet mixture in the mixer. Beat until fully incorporated. The batter will be thick.
- Add Apples:
- Using a sturdy spoon, fold the apple pieces into the batter until evenly distributed.
- Transfer to Baking Dish:
- Scrape the batter into the prepared baking dish, spreading it out evenly with a spatula.
- Sprinkle the butterscotch chips evenly over the top, pressing them gently into the batter.
- Bake:
- Bake in the preheated oven for 45 minutes to 1 hour, or until the bars are golden brown and slightly pulling away from the edges of the pan. A toothpick inserted into the center should come out clean.
