Cook the Chicken:

  • Heat a large pan over medium heat and melt the butter.
  • Add the garlic and cook for 1–2 minutes until fragrant.
  • Sprinkle the chicken with 1 tsp of cumin, coriander, and turmeric. Add the chicken to the pan and cook until fully cooked through.

Prepare the Vegetables:

  • Once the chicken is cooked, add the diced onion and bell pepper to the pan. Sauté for 3–4 minutes, until softened.
  • Add the chiles and tomatoes, stirring to combine.

Add the Rice and Seasonings:

  • Pour in the broth and stir well. Add the rice to the pan.
  • Sprinkle in the remaining 1 tsp of chili powder, cumin, and coriander, along with the salt, remaining 1/2 tsp of turmeric, and onion powder. Stir to combine.

Simmer:

  • Bring the mixture to a boil, then reduce the heat to low. Cover the pan and simmer for about 20 minutes, or until the liquid is absorbed and the rice is cooked through.

Finish the Dish:

  • Sprinkle shredded cheese over the top of the chicken and rice mixture. Cover and let it sit for 1–2 minutes, allowing the cheese to melt completely.
