Authentic Mexican Wedding Cookies
- Prepare Dough:
- In a large bowl, beat butter with an electric mixer until light and fluffy.
- Add 1/2 cup powdered sugar and vanilla, beating until well combined.
- Gradually mix in the flour, followed by the pecans until just incorporated.
- Chill Dough:
- Divide the dough in half, shape each portion into a ball, and wrap in plastic wrap.
- Chill in the refrigerator for about 30 minutes.
- Preheat Oven & Make Cinnamon Sugar:
- Preheat oven to 350°F (175°C).
- In a shallow dish, whisk together the remaining 1 1/2 cups powdered sugar and cinnamon. Set aside for coating the cookies.
- Shape Cookies:
- Remove one portion of dough from the fridge. Roll 2 teaspoons of dough at a time between your palms to form balls.
- Arrange on a large, ungreased baking sheet, spacing them about 1/2 inch apart.
- Bake:
- Bake for 18 minutes, or until the bottoms are golden brown and the tops are pale golden.
- Let cookies cool on the baking sheet for 5 minutes.
- Coat in Cinnamon Sugar:
- While still warm, gently toss the cookies in the cinnamon-sugar mixture to coat completely. Place on a wire rack to cool.
