Baby Bok Choy Stir Fry
- Heat Oil & Sauté Shallots:
- In a large nonstick skillet, heat a splash of oil over medium-high heat. Add the shallots and cook for 3-4 minutes, until softened and fragrant.
- Cook Bok Choy Stems:
- Add the bok choy stems (reserve the leafy greens) to the skillet and cook for an additional 3-4 minutes until crisp-tender.
- Add Remaining Ingredients:
- Add the leafy bok choy greens and any remaining ingredients, stirring to combine. Cook for 1-2 minutes until greens are just wilted.
- Top & Serve:
- Sprinkle with toasted almonds and serve warm.
