Baby Bok Choy Stir Fry

  1. Heat Oil & Sauté Shallots:
    • In a large nonstick skillet, heat a splash of oil over medium-high heat. Add the shallots and cook for 3-4 minutes, until softened and fragrant.
  2. Cook Bok Choy Stems:
    • Add the bok choy stems (reserve the leafy greens) to the skillet and cook for an additional 3-4 minutes until crisp-tender.
  3. Add Remaining Ingredients:
    • Add the leafy bok choy greens and any remaining ingredients, stirring to combine. Cook for 1-2 minutes until greens are just wilted.
  4. Top & Serve:
    • Sprinkle with toasted almonds and serve warm.
