Baked Apple Pancake

  • Preheat Oven:
Preheat your oven to 450°F (230°C). Spray a skillet with non-stick spray (like Pam) and set it aside.
  • Prepare Apple Filling:
In a skillet, melt butter over medium heat. Add apple slices and sauté until tender. Stir in sugar, cinnamon, nuts, and raisins, making sure the apples are well coated. Remove from heat and set aside.
  • Make the Batter:
In a microwave-safe bowl, melt butter and set it aside to cool.
In a separate bowl, beat eggs until light and fluffy. Gradually add the flour and salt, mixing until smooth. Stir in the cooled melted butter and milk.
  • Assemble and Bake:
Pour the apple filling into the prepared skillet. Top with the batter and spread evenly over the apples.
Bake at 450°F for 15 minutes.
  • Reduce Temperature:
After 15 minutes, reduce the oven temperature to 350°F (175°C) and bake for an additional 5 to 10 minutes, or until the pancake is golden brown and puffed.
  • Serve:
Remove from the oven, cut the pancake into four pieces, and serve with your favorite topping (like syrup, whipped cream, or powdered sugar). Enjoy!
