Banana & Oreo Muffin
- Prep Ingredients:
- Sift flour, baking powder, and baking soda into a bowl and set aside.
- Remove the cream from the Oreo cookies, place cookies in a ziplock bag, and crush them with a rolling pin until fine crumbs form.
- Cream Butter & Sugar:
In a mixing bowl, beat the butter and sugar with an electric mixer on medium speed until light and fluffy, about 3 minutes. - Add Eggs:
Add eggs one at a time, beating until each is fully incorporated and no egg traces remain. - Add Banana & Flavorings:
Mix in mashed banana, vanilla extract, and condensed milk, whisking until well blended. - Combine with Dry Ingredients:
Lower mixer speed and gradually add the flour mixture, blending until the batter is smooth. - Fold in Oreo Crumbs:
Stir in Oreo crumbs until evenly combined. - Fill Muffin Cups:
Spoon the batter into prepared muffin cups, filling each about 3/4 full. - Add Toppings & Bake:
Top each muffin with a banana slice and extra Oreo pieces. Bake at 180°C (350°F) for 20-25 minutes, or until a toothpick inserted in the center comes out clean. - Cool & Enjoy:
