Barbeque Beef Brisket
- Prepare the Brisket:
- Trim any large, thick pieces of fat from the brisket (leave some fat for moisture and flavor).
- Sprinkle the brisket generously with salt and pepper.
- Make the Spice Rub:
- In a small bowl, mix together onion powder, garlic powder, smoked paprika, cumin, and cayenne pepper.
- Dry rub both sides of the brisket with the seasoning mixture.
- Sear the Brisket:
- Heat oil in a pan over medium-high heat.
- Sear the brisket on both sides until browned.
- Remove from heat and set aside.
- Prepare the Sauce:
- In a bowl, stir together honey barbecue sauce and brown sugar.
- Pour half of the sauce into the bottom of your slow cooker.
- Slow Cook:
- Place the brisket, fatty side up, into the slow cooker.
- Cover the top of the brisket with the remaining sauce.
- Cover the slow cooker and set the heat to low for 9 hours, or until the brisket is fork-tender.
- Finish the Sauce:
- When the brisket is cooked, carefully remove it from the slow cooker and place it on a cutting board.
- Pour the sauce from the slow cooker into a saucepan and let it cool.
- Skim the fat that has risen to the top of the sauce using a spoon (it will appear lighter in color).
- Thicken the Sauce:
- In a small bowl, stir together cornstarch and 1 tablespoon of water until completely smooth.
- Pour the cornstarch mixture into the cooled sauce and stir to combine.
- Reduce the sauce by simmering it on the stovetop for about 10 minutes.
- Serve:
- Pour the thickened sauce over the brisket and serve.
- Enjoy the leftovers in BBQ sandwiches!
