Barbeque Beef Brisket

  • Prepare the Brisket:
    • Trim any large, thick pieces of fat from the brisket (leave some fat for moisture and flavor).
    • Sprinkle the brisket generously with salt and pepper.
  • Make the Spice Rub:
    • In a small bowl, mix together onion powder, garlic powder, smoked paprika, cumin, and cayenne pepper.
    • Dry rub both sides of the brisket with the seasoning mixture.
  • Sear the Brisket:
    • Heat oil in a pan over medium-high heat.
    • Sear the brisket on both sides until browned.
    • Remove from heat and set aside.
  • Prepare the Sauce:
    • In a bowl, stir together honey barbecue sauce and brown sugar.
    • Pour half of the sauce into the bottom of your slow cooker.
  • Slow Cook:
    • Place the brisket, fatty side up, into the slow cooker.
    • Cover the top of the brisket with the remaining sauce.
    • Cover the slow cooker and set the heat to low for 9 hours, or until the brisket is fork-tender.
  • Finish the Sauce:
    • When the brisket is cooked, carefully remove it from the slow cooker and place it on a cutting board.
    • Pour the sauce from the slow cooker into a saucepan and let it cool.
    • Skim the fat that has risen to the top of the sauce using a spoon (it will appear lighter in color).
  • Thicken the Sauce:
    • In a small bowl, stir together cornstarch and 1 tablespoon of water until completely smooth.
    • Pour the cornstarch mixture into the cooled sauce and stir to combine.
    • Reduce the sauce by simmering it on the stovetop for about 10 minutes.
  • Serve:
    • Pour the thickened sauce over the brisket and serve.
    • Enjoy the leftovers in BBQ sandwiches!
