Barbeque Mac and Cheese

  • Cook the Macaroni:
    • Prepare the macaroni according to package directions. Drain and set aside.
  • Make the Cheese Mixture:
    • In a food processor, combine the cottage cheese, milk, Parmesan cheese, ketchup, brown sugar, jalapeño, garlic, parsley, and seasonings. Blend until smooth and well combined.
  • Sauté the Onions:
    • In a frying pan, melt a tablespoon of butter over medium heat. Add the chopped onions and sauté until softened and translucent.
  • Prepare the Breadcrumbs:
    • In another frying pan, melt a pat of butter. Add the breadcrumbs and toss them in the pan until they are lightly browned. Remove from heat.
  • Preheat the Oven:
    • Preheat your oven to 325°F (160°C).
  • Combine the Ingredients:
    • Butter a baking dish. In the dish, combine the cooked macaroni, the cheese mixture from the food processor, sautéed onions, and half of the shredded cheese. Toss gently to mix everything together.
  • Top the Dish:
    • Sprinkle the browned breadcrumbs evenly over the macaroni mixture. Dot with a few pats of butter, and finish with grated Parmesan cheese and the remaining shredded cheese.
  • Bake:
    • Bake in the preheated oven for 25-30 minutes, or until the top is slightly golden and bubbly.
