Best Chicken Parmesan

  • Prep the Chicken:
    • Place chicken breasts under plastic wrap and pound to an even thickness (or fillet with a knife if they’re thick). If you don’t have a meat pounder, use a heavy skillet or pot.
  • Set Up the Breading Stations:
    • In three shallow dishes, add flour to one, beaten eggs to another, and breadcrumbs to the third.
  • Bread the Chicken:
    • Dredge each chicken breast in the flour, then dip in the egg wash, and finally coat in the breadcrumbs.
  • Fry the Cutlets:
    • Heat vegetable oil in a skillet over medium heat. Fry the chicken cutlets until golden brown, then transfer to a plate lined with paper towels.
  • Assemble the Bake:
    • Spread a thin layer of marinara sauce on the bottom of a 13×9 baking dish. Add a layer of fried chicken cutlets, spoon more marinara over them, and sprinkle with a generous layer of cheese. Repeat the layering with remaining cutlets, marinara, and cheese. Finish with a sprinkle of parsley on top.
  • Bake:
    • Cover the dish with foil and bake in a preheated 350°F oven for 35 minutes. Remove the foil and bake another 10 minutes or until the cheese is bubbly and golden.
