Boozy Barbeque Chicken
- Prep the Marinade:
- In a large glass or ceramic dish, mix the orange juice, olive oil, white wine, soy sauce, Sriracha or Tabasco sauce, molasses, minced garlic, minced ginger, and black pepper.
- Soak the Skewers:
- While preparing the marinade, soak wooden skewers in a shallow dish filled with water for at least 30 minutes to prevent burning on the grill.
- Prep the Vegetables:
- Cut the orange, bell peppers, onion, and broccoli into large bite-sized chunks (about 1 inch thick) and add them to the marinade.
- Gently stir in the mushrooms and cherry tomatoes. Make sure all the veggies are well-coated in the marinade.
- Cover and refrigerate while you prep the chicken.
- Preheat the Grill:
- Preheat your outdoor grill to medium heat.
- Prep the Chicken:
- Rinse the chicken under cold water and pat it dry with paper towels (dispose of the towel!).
- In a small bowl, mix together the mustard, salt, and pepper. Brush the mixture evenly over the chicken.
- Prepare the Beer Can:
- Once you’ve enjoyed some of your beer, refill the can with your choice of salad dressing and squeeze in the juice from half a lemon.
- Place the can upright on a disposable baking sheet and carefully insert the chicken cavity onto the can to create a “stand.”
- Grill the Chicken:
- Place the baking sheet with the beer can chicken on the preheated grill. Cover the grill and set a timer for 1 hour.
- Check the Chicken:
- After about an hour, carefully slice into the chicken to ensure it’s cooked through (the meat should be white with no pink remaining). If done, remove it from the grill and allow it to cool for at least 15 minutes.
- Serve:
- Remove the kebabs from the grill and turn off the heat. Place the rice in a serving dish and arrange the chicken pieces and kebabs on a platter. Squeeze the remaining lemon juice over the chicken for extra flavor.
