Broccoli Oatmeal Breakfast Casserole
Prepare the Baking Dish:
- Preheat your oven to 350°F (175°C).
- Lightly spray an 8-inch square baking dish with cooking spray to prevent sticking. Set aside.
Prepare the Dry Ingredients:
- In a food processor, grind the broccoli until finely chopped or almost pureed.
- In a large mixing bowl, combine the ground broccoli with all the dry ingredients (such as oatmeal, flour, baking powder, salt, and any preferred spices). Mix well to ensure even distribution.
Prepare the Wet Ingredients:
- In a separate bowl, whisk together all the wet ingredients (such as eggs, milk, oil, and any flavorings like vanilla or maple syrup) until smooth and well combined.
Combine Wet and Dry Mixtures:
- Pour the wet ingredients into the bowl with the dry ingredients.
- Stir thoroughly until the batter is well mixed and no dry spots remain. Be careful not to overmix to keep the casserole tender.
Assemble the Casserole:
- Spoon the prepared batter into the greased baking dish, spreading it evenly with a spatula.
- Optionally, you can add toppings such as additional broccoli florets, cheese, or seeds for added texture and flavor.
Bake the Casserole:
- Place the baking dish in the preheated oven.
- Bake for 25–30 minutes, or until a fork inserted into the center comes out clean and the top is golden brown.
Cool and Serve:
- Remove the casserole from the oven and allow it to cool in the dish for about 5 minutes.
- Cut into squares or desired shapes.
- Serve warm with a side of yogurt, fresh fruit, or your favorite breakfast accompaniments.
Storage Tips:
- Store any leftovers in an airtight container in the refrigerator for up to a week.
- Reheat individual portions in the microwave or enjoy them cold for a quick breakfast option.
