Sauté the Vegetables:

  • In a large pot, melt butter over medium heat. Add onions and carrots, and sauté for 5–6 minutes until tender.

Cook the Broccoli:

  • Add 1 cup of chicken broth to the pot and bring to a boil.
  • Stir in the broccoli, cover, and cook for 5–6 minutes or until the broccoli is tender.
  • Use a spoon to break the broccoli florets into smaller pieces.

Thicken the Soup:

  • Reduce the heat to low and add the remaining cup of chicken broth.
  • In a small bowl, whisk together the flour and milk until smooth. Gradually add this mixture to the pot while stirring.
  • Season with garlic powder, salt, and pepper. Cook for 5–6 minutes, stirring frequently, until the soup begins to thicken.

Add the Cheese:

  • Add the cheese in handfuls, stirring constantly over low heat. Continue stirring for about 10 minutes, until the soup is smooth and creamy.
  • If the soup becomes too thick, add more chicken broth to achieve your desired consistency. Avoid letting the soup boil.
