Brownie Coffins
Prepare the Pan and Preheat the Oven:
- Preheat oven to 350°F (175°C).
- Spray a coffin-shaped cake pan or regular muffin tin with baking spray to prevent sticking.
Make the Brownie Batter:
- Melt 1/2 cup butter in a microwave-safe bowl.
- In a large mixing bowl, combine the melted butter and sugar, stirring until smooth.
- Add the eggs and vanilla extract, mixing well until fully incorporated.
- Beat in the dark chocolate cocoa powder until smooth.
- Add the flour, salt, and baking powder, beating just until combined.
Fill the Coffin Pans:
- Spoon the brownie batter into the coffin molds, filling each about 2/3 of the way full.
Bake the Brownies:
- Bake at 350°F for 20–25 minutes, or until a toothpick inserted in the center comes out with only a few moist crumbs. (22 minutes works well for most ovens.)
Cool and Decorate:
- Let the brownies cool completely in the pan before removing them.
- Decorate as desired with icing, sprinkles, or any spooky toppings for a fun, festive treat!
