Buckwheat Banana Pancakes
- Preheat the Skillet:
- Heat a large skillet over medium heat for about 3-5 minutes while you prepare the batter.
- Make the Batter:
- In a mixing bowl, whisk together the flours, flaxseed, baking powder, baking soda, and salt.
- Add the yogurt, milk, maple syrup, vanilla, and oil (if using). Mix until smooth. No need to worry about over-mixing since there’s no gluten in this batter.
- The batter should be thick, but if you prefer thinner pancakes, stir in an extra tablespoon or two of milk.
- Gently fold in the sliced bananas.
- Cook the Pancakes:
- Grease the skillet with a few drops of oil and spread it around evenly.
- Pour the batter into the skillet, about 1 cup at a time (you should hear a nice sizzle when it hits the pan).
- Cook for about 2 minutes on each side. Note: the first pancake may take a bit longer to cook through, so be patient!
- Serve:
- Serve the pancakes warm with plenty of maple syrup, extra banana slices, nuts, chocolate chips, or any of your favorite toppings.
