Carrot and Coriander Soup
- Heat Oil/Butter:
- In a deep pot, heat 1-2 tablespoons of oil or butter over medium heat.
- Add the chopped onions and sauté until soft and translucent, about 5-7 minutes.
- Add Carrots:
- Stir in the carrots and sauté for another 3-4 minutes to enhance their flavor.
- Add Water and Seasoning:
- Pour in water (or vegetable broth for extra flavor) until the carrots are just covered. Season with salt and pepper to taste.
- Bring the mixture to a boil, then reduce heat to low. Cover and simmer for about 15-20 minutes, or until the carrots are tender.
- Add Orange Juice and Spices:
- Once the carrots are cooked, stir in the orange juice and coriander powder. Let the soup cook for an additional 2-3 minutes to allow the flavors to meld.
- Blend the Soup:
- Carefully transfer the soup to a blender or use an immersion blender to puree until smooth and creamy.
- Garnish and Serve:
- Taste and adjust seasoning if necessary. Garnish with fresh coriander leaves.
- Serve the soup hot with a drizzle of olive oil or a dollop of cream if desired.
