Carrot Banana Bread

  • Preheat the Oven:
    • Preheat your oven to 350°F (175°C).
    • Butter and flour a loaf pan, then set it aside.
  • Prepare the Dry Ingredients:
    • In a medium mixing bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg. Set aside.
  • Mix the Wet Ingredients:
    • In a large mixing bowl, whisk together the yogurt and honey until well combined.
    • Add the eggs and vanilla extract, mixing until smooth.
  • Combine the Mixtures:
    • Gradually add the flour mixture to the wet ingredients, about 1/4 at a time, alternating with the mashed banana. Begin and end with the flour mixture.
    • Scrape down the sides of the bowl and mix until just incorporated; be careful not to overmix.
  • Add Remaining Ingredients:
    • Gently fold in the grated carrot, raisins, and walnuts until evenly distributed throughout the batter.
    • Spoon the batter into the prepared loaf pan. If desired, sprinkle sunflower seeds over the top.
  • Bake the Loaf:
    • Bake in the preheated oven for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
  • Cool the Loaf:
    • Allow the loaf to cool in the pan for 15-20 minutes. Then, remove it from the pan and continue cooling on a wire rack.
  • Prepare the Cream Cheese Frosting (if desired):
    • In a medium mixing bowl, use an electric mixer to beat together the cream cheese, butter, and vanilla on low to medium speed until fluffy.
    • Gradually add 1 ½ cups of powdered sugar and 1 tablespoon of milk. Mix until combined.
    • Continue adding more powdered sugar and milk in small amounts, beating after each addition until you reach your desired consistency.
    • Beat on low speed for about 2 minutes until the frosting is light and fluffy.
  • Frost the Loaf:
    • Once the loaf has completely cooled, frost with the cream cheese frosting if desired. Enjoy!
