Cheesy Bacon Burger with Spicy Chipotle Aiolo Sauce
For the Burgers:
- Cook the Turkey Bacon:
- In a pan, cook turkey bacon according to the package instructions. Once cooked, remove the bacon and set it aside.
- Saute the Peppers & Onions:
- In the same pan with the bacon drippings, add the sliced bell peppers and onions. Cook over medium heat for about 10 minutes, or until the vegetables are tender. Set aside.
- Prepare the Burger Patties:
- In a small bowl, combine the ground beef with garlic powder and ground pepper. Mix well to distribute the seasoning evenly.
- Divide the seasoned ground beef into 8 equal portions (about 2 oz each). Flatten each portion into a thin patty.
- Stuff the Burgers:
- Place half of a cheese wedge (or your preferred cheese) in the center of 4 patties. Top each with another patty and press the edges together to seal, making sure no cheese escapes during cooking.
- Cook the Burgers:
- Preheat a grill (or grill pan) over medium-high heat. Cook the stuffed burgers for about 5 minutes per side, or until fully cooked through, ensuring the internal temperature reaches 160°F (71°C).
- Remove from the grill and set aside.
- Assemble the Burgers:
- Place each burger on a bun. Top with the cooked turkey bacon, sautéed peppers and onions, and a dollop of spicy chipotle aioli (recipe below).
For the Spicy Chipotle Aioli:
- In a small bowl, combine the following ingredients:
- ½ cup mayonnaise
- 1-2 tablespoons chipotle peppers in adobo sauce (adjust for desired spiciness)
- 1 teaspoon lime juice
- 1 clove garlic, minced (optional)
- Salt and pepper to taste
- Whisk until fully combined. The sauce should be smooth and creamy.
- Serve: Use the aioli as a topping for the burgers or as a dipping sauce.
