Chicken Pasta with Anchovy Rosemary Sauce

  1. Prepare the Anchovy Rosemary Sauce:
    • In a food processor, combine garlic, anchovies (with their oil), rosemary, and lemon juice. Blend until fairly smooth.
    • Gradually add olive oil while blending until the mixture is smooth and well combined. Set the sauce aside.
  2. Season the Chicken:
    • Season the chicken with red pepper flakes, poultry seasoning, and a pinch of kosher salt. Set aside.
  3. Cook the Pasta:
    • Bring a large pot of water to a boil. Add a pinch of salt to the water.
    • Add the pasta and cook according to the package instructions, about 6-9 minutes for al dente. Once done, drain the pasta, reserving a little pasta water.
  4. Cook the Chicken:
    • Heat a bit of olive oil in a wide pan over medium heat.
    • Add the seasoned chicken to the pan and cook for 5-7 minutes, or until fully cooked and no longer pink inside.
  5. Combine Pasta and Sauce:
    • Once the chicken is cooked, add the drained pasta directly into the pan with the chicken.
    • Pour in the prepared anchovy rosemary sauce and toss to coat the pasta and chicken evenly. If the sauce needs thinning, add a small amount of reserved pasta water.
  6. Serve:
    • Sprinkle with fresh parsley for garnish, if desired, and serve immediately.
