Chilled Lettuce Soup

  • Prepare the Soup Base:
    • Heat oil in a saucepan over medium heat.
    • Add the shallot and sauté for 2 minutes, until softened and fragrant.
    • Add the potato and stock to the pan, bringing the mixture to a boil.
    • Once boiling, cover and reduce the heat. Simmer for 15 minutes, until the potato is tender.
  • Add Lettuce and Tarragon:
    • Stir in the lettuce and tarragon, cooking for just a minute or so until the lettuce wilts (it will happen quickly).
    • Remove the saucepan from the heat.
  • Blend the Soup:
    • Carefully transfer the soup to a blender and blend until smooth.
    • Let the soup cool to room temperature, then refrigerate until thoroughly chilled (about 1-2 hours).
  • Serve the Soup:
    • When ready to serve, ladle the chilled soup into bowls.
    • Spoon 2 teaspoons of yogurt onto each serving.
    • Sprinkle with crispy bacon and fresh basil for garnish.
