Chocolate Chip Eggnog Bars
- Prepare the Pan:
- Preheat your oven to 300°F. Line an 8×8-inch baking pan with foil, letting it hang over the sides for easy removal, and lightly spray with non-stick spray.
- Make the Crust:
- In a food processor, pulse the OREOs until finely crushed. Add the melted butter and pulse again until combined. Press the crust mixture firmly and evenly into the bottom of the prepared pan. Set aside.
- Prepare the Filling:
- Wipe out the food processor and add the cream cheese and sugar. Pulse until smooth and creamy, ensuring there are no lumps. Add the flour, eggnog, and eggs, pulsing until well combined. Gently fold in the chocolate chips, then pour the mixture over the crust in the pan. Sprinkle a few extra chocolate chips on top if desired.
- Bake:
- Bake in the preheated oven for 35-40 minutes, until the edges are just set. Allow the bars to cool completely at room temperature.
- Chill and Serve:
- Once cooled, refrigerate the bars for a few hours until firm. When ready to serve, lift the bars out of the pan using the foil overhang. Sprinkle the top with nutmeg for a festive finish.
- Storage:
- Keep the bars in the refrigerator until serving.
