Chocolate Spelt Cake
- Preheat Oven and Prepare Ingredients:
- Preheat the oven to 350°F (175°C).
- In a small bowl, mix 1 tablespoon of instant coffee with warm coffee. Add vanilla extract, baking soda, and currants, stirring until frothy.
- Prepare Dry Ingredients:
- In a medium bowl, whisk together spelt flour, cocoa powder, and salt until evenly combined.
- Cream Butter and Sugars:
- In a mixing bowl, beat butter, brown sugar, and white sugar until smooth and creamy.
- Add eggs one at a time, beating well after each addition. Gradually pour in the coffee mixture while continuing to mix.
- Combine Wet and Dry Ingredients:
- With the mixer on low speed, slowly add the spelt flour mixture to the wet ingredients. Mix until just combined, ensuring there are no lumps.
- Prepare the Bundt Pan:
- Generously butter a bundt pan, ensuring all surfaces are coated. Dust the inside of the pan with cocoa powder, shaking off any excess.
- Bake the Cake:
- Pour the batter evenly into the prepared bundt pan. Bake for 50–55 minutes, or until a toothpick inserted into the center comes out clean.
- Cool and Remove from Pan:
- Allow the cake to cool in the pan for about 15 minutes. Carefully loosen the edges, then invert the cake onto a wire rack to cool completely before serving.
