Cilantro Hummus

  • Blend the Base:
    • In your food processor, combine the drained garbanzo beans, tahini, lemon juice, minced garlic, salt, and cayenne pepper (if using).
    • Pulse the mixture until it is fairly smooth.
  • Adjust the Texture:
    • With the processor running, slowly pour in water, stopping occasionally to check the texture. Add more water gradually until you reach your desired consistency.
  • Incorporate Olive Oil:
    • Keep the motor running and drizzle in the olive oil. Add more olive oil if you prefer a richer flavor and creamier texture.
  • Taste and Adjust:
    • Stop the processor and taste the hummus. Adjust the seasoning as needed (more salt, lemon juice, or cayenne), then pulse to combine. Repeat the taste-testing process until the flavor is to your liking.
  • Add Fresh Herbs:
    • Add a handful of fresh cilantro to the hummus and pulse a few times until the cilantro is finely chopped and incorporated.
  • Serve:
    • Spoon the hummus into a serving bowl and garnish with a drizzle of olive oil and additional cilantro, if desired.
    • Serve immediately, or cover and refrigerate for later use.
