Cinnamon & Sugar Roasted Chickpeas

  • reheat and Prep:
    • Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone mat for easy cleanup.
  • Prepare the Chickpeas:
    • Drain and rinse a can of chickpeas thoroughly under cold water.
    • Pat the chickpeas dry by placing them between two sheets of paper towels. Gently rub them to absorb any excess moisture. Remove any loosened skins, but don’t worry if you can’t get all of them.
  • Season the Chickpeas:
    • Transfer the dried chickpeas to a bowl. Add 1 tablespoon olive oil, 1 tablespoon maple syrup, and 1 teaspoon ground cinnamon. Stir until the chickpeas are evenly coated.
  • Roast the Chickpeas:
    • Spread the seasoned chickpeas in a single layer on the prepared baking sheet.
    • Bake for 15 minutes, then remove the sheet and give the chickpeas a quick stir to ensure even cooking.
    • Continue baking, checking every 3-4 minutes, until the chickpeas are browned and crisp (this could take an additional 6-10 minutes). Be careful not to burn them — the longer they roast, the crunchier they will be.
  • Cool and Add Sugar:
    • Remove the chickpeas from the oven and let them cool for a few minutes.
    • Once slightly cooled, sprinkle 1-2 teaspoons of sugar (or more to taste) over the chickpeas, and give them a final stir to coat.
  • Serve and Enjoy:
    • Serve warm or at room temperature. These chickpeas make a crunchy, sweet snack!
