Coconut-Almond Crusted Tilapia
- Prepare the Fish
- Pat the fish fillets dry with paper towels.
- Season both sides with a pinch of salt and pepper.
- Squeeze the juice from half a lemon over the fillets and drizzle with coconut milk.
- Turn the fillets to ensure they are evenly coated.
- Let them marinate at room temperature for 15 minutes.
- Make the Breading
- In a shallow bowl, combine the almond meal, shredded coconut, salt, pepper, ground ginger, and chopped mint. Mix well to combine.
- Cook the Fish
- Heat a generous amount of oil in a large skillet over medium heat until shimmering.
- Carefully lay the marinated fillets in the skillet.
- Cook for 3-5 minutes on one side, then flip and cook for an additional 3-5 minutes, or until both sides are golden brown and the fish flakes easily with a fork. Adjust the cooking time based on the thickness of the fillets; thinner fillets may cook more quickly.
- Drain and Serve
- Transfer the cooked fillets to a stack of paper towels to drain any excess oil and cool slightly.
