Coffee Cookies
Prepare the Dough:
- Preheat your oven to 350°F (175°C) and line a cookie sheet with parchment paper.
- In a food processor, combine the cake flour, sugar, coffee, walnuts, and salt. Process for about 10 seconds, or until the walnuts are finely ground.
- Transfer the mixture to a mixing bowl and add the canola oil, stirring until it forms a pasty dough.
- Use your hands to separate the dough into small crumbs, then add the water and combine until a smooth dough forms.
- If you like, fold in raisins at this stage.
Shape and Bake the Cookies:
- Divide the dough into 16 equal pieces and roll each piece into a ball.
- Arrange the dough balls on the prepared cookie sheet, spacing them slightly apart.
- Bake for 25 minutes, or until the cookies are golden.
Cool and Serve:
- Let the cookies cool on the baking sheet for about 20 minutes.
- Dust with powdered sugar before serving, if desired.
