Crawfish Cake Sliders
- Sauté the Vegetables:
- In a sauté pan, heat 1 teaspoon of oil over medium heat.
- Add the chopped onion, red pepper, and celery.
- Cook until the vegetables are tender, about 2-3 minutes.
- Combine Ingredients:
- Remove the pan from heat and stir in the minced garlic, crawfish meat, and 1 teaspoon of Creole spice (adjust to taste).
- Transfer the mixture to a mixing bowl and set aside to cool.
- Mix in Bindings:
- Once the mixture has cooled slightly, add the egg and enough breadcrumbs to help bind the mixture together.
- Season to taste with salt, pepper, and additional Creole spice as desired.
- Form the Patties:
- Shape the mixture into 8 equal patties, flattening each one to about 3/4 inch thick.
- Cook the Patties:
- In the same sauté pan, heat the remaining oil over medium-high heat.
- Add the patties to the pan and cook until they are brown and crispy on both sides, about 3-4 minutes per side.
- Serve:
- Remove the crawfish cakes from the pan and serve hot with a dollop of tartar sauce on the side.
