Creamy Potato Soup

  1. Sauté the Onions:
    • In a large saucepan over medium-high heat, melt the butter.
    • Add the chopped onions and sauté until they become translucent, about 5-7 minutes.
  2. Add Garlic and Broth:
    • Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
    • Immediately pour in the chicken broth and bring the mixture to a boil.
  3. Cook the Potatoes:
    • Add the diced potatoes to the saucepan. If necessary, add water to just barely cover the potatoes.
    • Bring the mixture back to a boil, then reduce the heat to a medium boil.
    • Cook until the potatoes are tender, about 20-25 minutes.
  4. Add Cream and Simmer:
    • Stir in the half-and-half and bring the soup to a low boil.
