Creamy Potato Soup
- Sauté the Onions:
- In a large saucepan over medium-high heat, melt the butter.
- Add the chopped onions and sauté until they become translucent, about 5-7 minutes.
- Add Garlic and Broth:
- Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
- Immediately pour in the chicken broth and bring the mixture to a boil.
- Cook the Potatoes:
- Add the diced potatoes to the saucepan. If necessary, add water to just barely cover the potatoes.
- Bring the mixture back to a boil, then reduce the heat to a medium boil.
- Cook until the potatoes are tender, about 20-25 minutes.
- Add Cream and Simmer:
- Stir in the half-and-half and bring the soup to a low boil.
- Continue cooking for an additional 10 minutes, stirring occasionally.
- Blend the Soup (Optional):
- For a smoother consistency, use a stick blender to puree the soup directly in the pot, or mash the potatoes with the back of a spoon while stirring.
- Season and Serve:
- Season the soup with salt and pepper to taste.
