Crispy Tiger Prawns With Honey and Garlic Sauce
- Prepare the Prawns:
- In a small bowl, mix cornflour and water until fully dissolved.
- Add the prawns, soy sauce, egg, and sesame oil. Stir well to coat the prawns evenly in the mixture. Set aside.
- Prepare the Honey Garlic Sauce:
- In another bowl, combine all the honey garlic sauce ingredients: honey, soy sauce, garlic, vinegar, and sesame oil. Stir until well mixed and set aside.
- Fry the Prawns:
- Heat oil in a wok or deep frying pan over high heat until the surface slightly shimmers (around 180°C/350°F).
- Fry the prawns in two batches. Deep-fry the first batch for about 1 minute until they are light golden and crispy. Use a slotted spoon to remove the prawns and drain on kitchen paper. Repeat with the remaining prawns.
- Prepare the Sauce:
- Drain the oil from the wok and set it aside for future use. Wipe the wok clean with kitchen paper.
- Heat the same wok over medium heat. Add the prepared honey garlic sauce and simmer for about 1 minute, stirring occasionally.
- Combine and Serve:
- Add the fried prawns to the wok and toss them in the sauce until they are fully coated and heated through.
- Garnish with chopped spring onions and serve immediately.
