Easter Nest Sweet Cake With Sour Cream-Royal Icing and Pistachios
- Preheat the Oven:
- Preheat your oven to 190°C (375°F) and lightly grease a ring cake pan. Set aside.
- Prepare the Cake Batter:
- In a medium bowl, using an electric mixer, beat the sugar, eggs, and softened butter until the mixture is light and creamy.
- Add sour cream, flour, baking powder, salt, and vanilla extract (if using). Mix on low speed until well combined and smooth, about 2 minutes.
- Bake the Cake:
- Pour the batter into the prepared ring cake pan and smooth the top.
- Bake for 20-25 minutes, or until the cake is golden brown and a skewer inserted into the center comes out clean.
- Once done, let the cake cool in the pan for 5 minutes, then transfer it to a wire rack to cool completely.
- Prepare the Lemon Icing:
- While the cake cools, beat the egg white in a clean bowl with a standard mixer until soft peaks form.
- Gradually add powdered sugar and lemon juice, beating until the icing is smooth and forms stiff peaks. Add a few drops of food coloring if desired and mix just until incorporated.
- Decorate the Cake:
- Once the cake has cooled (about 10 minutes), pour the royal icing over the top, letting it drip naturally down the sides.
- Sprinkle the top with chopped pistachios for extra flavor and texture.
- Serve & Enjoy:
- Allow the icing to set for a few minutes, then slice and enjoy your beautifully glazed cake!
