Easy and Addictive Eggplant Chips
- Preheat and Prepare:
- Preheat your oven to 400°F (200°C).
- Arrange the eggplant rounds in a single layer on a large baking sheet.
- Marinate the Eggplant:
- In a bowl, whisk together the marinade ingredients.
- Pour the marinade evenly over the eggplant slices, ensuring each piece is well coated.
- Flip the slices over to allow the marinade to soak into both sides. Let the eggplant marinate for a few minutes while the oven heats up.
- Bake the Eggplant:
- Place the baking sheet in the preheated oven and bake the eggplant for 10-15 minutes, or until the underside is golden brown and crispy.
- Flip the slices with a spatula and bake for an additional 5-10 minutes, or until the eggplant is tender, caramelized, and golden brown on both sides.
- Serve:
- Remove from the oven and serve immediately while warm and crispy.
- Clean Up Tip:
- Some of the marinade may not be absorbed by the eggplant and will bake onto the pan. Simply soak the pan for at least 10 minutes, and the sauce will wash off easily.
