Easy Slow Cooker Whole Chicken with Rosemary
- Prepare the Seasonings:
- In a small bowl, combine all seasonings, reserving half of the rosemary for later use.
- Prepare the Chicken:
- Baste the chicken with a mixture of unsalted butter and olive oil.
- Rub the seasoning mixture all over the chicken, ensuring it’s evenly coated.
- Stuff the Chicken:
- Add half of the diced onion, lemon wedges, and reserved rosemary into the cavity of the chicken.
- Prepare the Slow Cooker:
- Roll three small lemon-sized balls of aluminum foil and place them in the bottom of the slow cooker to create a rack for the chicken.
- Add the remaining lemon wedges and onion to the bottom of the slow cooker, along with enough water to cover the bottom.
- Cook the Chicken:
- Place the seasoned chicken on top of the foil balls in the slow cooker.
- Sprinkle the remaining rosemary over the top of the chicken.
- Cover the slow cooker and cook on low for 7-8 hours or on high for 4-5 hours, until the chicken is fully cooked and tender.
- Serve:
- Once cooking is complete, carefully remove the chicken from the slow cooker. Let it rest for a few minutes before carving and serving.
