Keto Zucchini Lasagna

Preheat Oven:

  • Preheat the oven to 375°F (190°C).

Prepare Zucchini:

  • Slice the zucchini lengthwise and place the slices flat on a cookie sheet.
  • Bake in the oven for 15 minutes to help bake out most of the zucchini’s liquid.

Cook the Meat Sauce:

  • In a medium saucepan, sauté the onion and bell pepper until softened.
  • Add the ground turkey and cook thoroughly, breaking it apart as it cooks.
  • Stir in the tomato sauce and seasonings, then reduce the heat to low and let the mixture simmer for 5 minutes.

Prepare the Cheese Mixture:

  • In a separate bowl, combine the ingredients for the cheese mixture and set aside.

Assemble the Lasagna:

  • In a 9 x 13-inch baking dish, layer the bottom with the zucchini noodles.
  • Spread the cheese mixture over the zucchini and then add a layer of the meat sauce.
  • Repeat the layering process until all ingredients are used, finishing with a layer of mozzarella cheese on top.
  • Cover the baking dish with foil.

Bake the Lasagna:

  • Bake in the preheated oven for 30 minutes.
  • Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.

Serve:

  • Remove from the oven and allow to cool for 5 minutes before serving.
