Keto Zucchini Lasagna
Preheat Oven:
- Preheat the oven to 375°F (190°C).
Prepare Zucchini:
- Slice the zucchini lengthwise and place the slices flat on a cookie sheet.
- Bake in the oven for 15 minutes to help bake out most of the zucchini’s liquid.
Cook the Meat Sauce:
- In a medium saucepan, sauté the onion and bell pepper until softened.
- Add the ground turkey and cook thoroughly, breaking it apart as it cooks.
- Stir in the tomato sauce and seasonings, then reduce the heat to low and let the mixture simmer for 5 minutes.
Prepare the Cheese Mixture:
- In a separate bowl, combine the ingredients for the cheese mixture and set aside.
Assemble the Lasagna:
- In a 9 x 13-inch baking dish, layer the bottom with the zucchini noodles.
- Spread the cheese mixture over the zucchini and then add a layer of the meat sauce.
- Repeat the layering process until all ingredients are used, finishing with a layer of mozzarella cheese on top.
- Cover the baking dish with foil.
Bake the Lasagna:
- Bake in the preheated oven for 30 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
Serve:
- Remove from the oven and allow to cool for 5 minutes before serving.
