Frittata with Mushrooms, Thyme and Parmigiano Cheese
- Preheat the Oven:
- Set the oven to 350°F (175°C). Later, you’ll switch it to “Broil.”
- Prepare the Skillet:
- Heat an 8-inch ovenproof skillet over medium-high heat.
- Lightly coat the pan with cooking spray or butter.
- Sauté the Vegetables:
- Add the mushrooms and green onions to the skillet.
- Sauté for about 12 minutes or until the mushrooms are nicely browned.
- Make the Egg Mixture:
- In a medium bowl, whisk together the eggs and egg replacement.
- Add the half-and-half, grated Parmigiano cheese, thyme, and any other desired herbs.
- Season with salt and pepper, then whisk until well combined.
- Combine and Cook:
- Pour the egg mixture into the skillet with the sautéed mushrooms and green onions.
- Reduce heat to medium and cook, covered, for about 6 minutes or until the top is mostly set with a slight jiggle in the center.
- Bake the Frittata:
- Transfer the skillet to the oven and bake at 350°F for 5-10 minutes, or until the frittata is fully set and no longer runny on top.
- Broil for a Golden Finish:
- Switch the oven to “Broil” and place the skillet on the lowest rack.
- Broil for about 2 minutes, or until the top turns golden brown. Keep a close eye to avoid over-browning.
- Serve:
- Let the frittata cool slightly before slicing. Serve warm and enjoy the creamy, herbaceous flavors!
