Ginger Chicken Stir-Fry
Marinate the Chicken:
- In a shallow baking dish, combine teriyaki sauce and water.
- Add chicken pieces, ensuring they are well-coated. Cover and refrigerate for at least 2 hours.
Stir-Fry the Chicken and Onion:
- Drain the marinade from the chicken.
- In a large skillet or wok, heat oil over medium-high heat.
- Add the marinated chicken and onion, stir-frying until the chicken is slightly browned.
Add Vegetables and Ginger:
- Stir in fresh vegetables, ginger, and wine. Cover and let simmer for 4–5 minutes, or until the vegetables are tender-crisp. (For a shortcut, you can use a 16-ounce package of frozen mixed vegetables of your choice.)
Thicken the Sauce:
- In a small bowl, mix cornstarch with water until smooth.
- Gradually pour the cornstarch mixture into the skillet, stirring constantly, until the sauce thickens.
Serve:
- Spoon the stir-fry over hot rice and enjoy the savory, gingery flavors!
