Ginger Lentils with Carrots and Fresh Herbs

  1. Prepare Carrots:
    • Peel and slice 1 large carrot.
    • In a skillet over medium heat, sauté the carrot slices with 1 teaspoon cumin seeds for about 15 minutes, or until tender. Set aside to cool.
  2. Make the Dressing:
    • While the carrots cool, peel and grate 1 tablespoon fresh ginger.
    • In a small bowl, combine the ginger with the juice of 1 lemon, 1 tablespoon raw honey, a handful of chopped fresh mint, and a pinch of salt. Taste and adjust the seasoning as needed.
