Ginger Lentils with Carrots and Fresh Herbs
- Prepare Carrots:
- Peel and slice 1 large carrot.
- In a skillet over medium heat, sauté the carrot slices with 1 teaspoon cumin seeds for about 15 minutes, or until tender. Set aside to cool.
- Make the Dressing:
- While the carrots cool, peel and grate 1 tablespoon fresh ginger.
- In a small bowl, combine the ginger with the juice of 1 lemon, 1 tablespoon raw honey, a handful of chopped fresh mint, and a pinch of salt. Taste and adjust the seasoning as needed.
- Assemble the Salad:
- In a large bowl, combine the cooled carrots, 1 cup cooked lentils, 1 diced avocado, and the dressing. Toss gently to coat.
