  • Prepare the Muffin Tin:
    • Line a mini muffin tin with paper liners or lightly spray with cooking oil to prevent sticking.
  • Make the Peanut Butter Filling:
    • In a bowl, mix together the peanut butter filling ingredients until smooth. Set aside.
  • Melt the Chocolate:
    • In a heatproof bowl, melt the chocolate and shortening over a pot of simmering water (double boiler method). Ensure the water doesn’t touch the bottom of the bowl to avoid burning the chocolate. Stir occasionally until smooth and melted.
  • Assemble the Cups:
    • Spoon about 1 teaspoon of the melted chocolate into each muffin cup, spreading it to cover the bottom.
  • Add Peanut Butter Filling:
    • Top the chocolate layer with a scant teaspoon of the peanut butter mixture, smoothing it into an even layer.
  • Finish with More Chocolate:
    • Spoon another teaspoon of melted chocolate over the peanut butter, spreading it to fully cover the filling.
  • Chill and Set:
    • Place the muffin tin in the refrigerator and chill until the peanut butter cups are fully set, about 1-2 hours.
  • Store:
    • Once set, remove the peanut butter cups from the muffin tin and store in an airtight container in the refrigerator.
