Gluten Free Dairy Free Buttermilk Biscuits
- Preheat Oven:
- Preheat your oven to 400°F (200°C) and lightly grease a baking sheet or line it with parchment paper.
- Make the Buttermilk:
- In a small bowl, mix the soy milk (or another milk alternative) with 1 teaspoon of vinegar. Let it sit for about 5 minutes to thicken.
- Prepare the Dough:
- In a large mixing bowl, combine the almond flour, cornstarch, baking powder, xanthan gum, salt, and sugar. Stir until evenly mixed.
- Add the cold, cubed butter to the dry ingredients. Use a pastry cutter or a fork to cut the butter into the flour mixture until it resembles coarse crumbs.
- Add Wet Ingredients:
- Stir in the eggs and the prepared buttermilk. If the dough seems a bit too wet, add 1-2 tablespoons of almond flour to get a sticky but manageable consistency.
- Shape the Biscuits:
- Roll the dough into golf-ball-sized portions and place them on the prepared baking sheet, close together but not touching.
- Gently flatten each ball slightly with your palm to give them more of a biscuit shape.
- Bake:
- Bake for 17-20 minutes, or until the biscuits are golden brown on top and cooked through.
