Grandma B’s Rhubarb Cake
- Prepare the Cake Batter:
- In a mixing bowl, combine all cake ingredients until well blended.
- Prepare the Baking Pan:
- Spray a 9×13-inch baking pan with non-stick cooking spray.
- Assemble the Cake:
- Pour the cake batter into the prepared pan.
- In a separate bowl, mix together sugar, cinnamon, and coconut.
- Evenly sprinkle the sugar mixture over the top of the cake batter.
- Add chopped walnuts on top of the mixture.
- Bake:
- Bake in a preheated oven at 350°F (175°C) for 30 minutes, or until a toothpick inserted in the center comes out clean.
- Serve:
- Allow the cake to cool slightly, then serve warm. Enjoy!
