Homemade Oatmeal Cream Pies
Prepare the Dough:
- Preheat the oven to 350°F and line cookie sheets with parchment paper.
- In a medium bowl, sift together the dry ingredients and set aside.
Make the Cookie Batter:
- In a large mixing bowl, cream the brown sugar, butter, egg, and vanilla with an electric mixer until smooth.
- Gradually add the dry ingredients to the wet mixture, mixing until well combined.
- Fold in the oats until evenly distributed.
Shape and Bake the Cookies:
- Use a tablespoon-sized scoop to form equal-sized dough balls, placing them on the cookie sheets with enough space for spreading.
- Bake for 7-9 minutes, or until the cookies are just golden around the edges.
- Let the cookies cool completely on the parchment paper before removing.
Prepare the Cream Filling:
- In a mixing bowl, cream together the shortening, powdered sugar, and vanilla until smooth.
- Mix in the marshmallow fluff until fully combined.
Assemble the Cream Pies:
- Pair up the cookies by size and shape. Turn one cookie of each pair upside down.
- Use a piping bag (or a zip-top bag with a corner snipped) to pipe a layer of filling onto the bottom cookie.
- Gently press the top cookie onto the filling to create a sandwich.
Finishing Touch:
- You can opt for a thin or thick layer of filling—there should be plenty of filling for all 10 cream pies.
