Indian Lentil Dahl
- Sauté the Onion and Spices:
- In a large saucepan, heat the oil over medium-high heat.
- Add the chopped onion and a pinch of salt. Cook, stirring occasionally, until the onion starts to brown, about 5 minutes.
- Add the minced garlic, ginger, and Garam Masala, and cook for about 1 minute until fragrant, stirring constantly.
- Cook the Lentils:
- Stir in the lentils, coconut milk, and water.
- Bring the mixture to a boil, then reduce the heat to low.
- Simmer partially covered for 25-30 minutes, or until the lentils are fully tender and have broken down to an almost paste-like consistency. Stir occasionally to prevent sticking.
- Finish and Season:
- Once the lentils are done, stir in the lime juice and chopped cilantro.
- Taste and adjust the seasoning with more salt if needed.
- Serve:
- Serve the lentil curry on its own or over rice for a heartier meal.
- Top with diced tomatoes for added freshness.
