Indian Lentil Dahl

  1. Sauté the Onion and Spices:
    • In a large saucepan, heat the oil over medium-high heat.
    • Add the chopped onion and a pinch of salt. Cook, stirring occasionally, until the onion starts to brown, about 5 minutes.
    • Add the minced garlic, ginger, and Garam Masala, and cook for about 1 minute until fragrant, stirring constantly.
  2. Cook the Lentils:
    • Stir in the lentils, coconut milk, and water.
    • Bring the mixture to a boil, then reduce the heat to low.
    • Simmer partially covered for 25-30 minutes, or until the lentils are fully tender and have broken down to an almost paste-like consistency. Stir occasionally to prevent sticking.
  3. Finish and Season:
    • Once the lentils are done, stir in the lime juice and chopped cilantro.
    • Taste and adjust the seasoning with more salt if needed.
  4. Serve:
    • Serve the lentil curry on its own or over rice for a heartier meal.
    • Top with diced tomatoes for added freshness.
