Irish Colcannon
- Prepare the Cabbage:
- Chop the cabbage into bite-sized pieces.
- Steam the cabbage in a saucepan with a small amount of water (just enough to create steam) until tender but not mushy, about 10-15 minutes. Set aside.
- Cook the Potatoes:
- Peel and chop the potatoes into even-sized pieces.
- Place them in a large pot, cover with water, and add a pinch of salt.
- Boil the potatoes until fork-tender, about 15-20 minutes. Drain and set aside.
- Prepare the Leeks:
- Clean the leeks thoroughly to remove any dirt. Chop them, including the green tops.
- In a separate saucepan, combine the chopped leeks with milk. Simmer over low heat until the leeks are tender, about 10-15 minutes.
- Cook the Bacon (if using):
- In a skillet, sauté the bacon until crisp. Remove from heat and let it cool slightly before breaking it into bite-sized pieces.
- Mash the Potatoes:
- In a large mixing bowl, mash the drained potatoes using a potato masher or fork until smooth but still slightly chunky.
- Combine Ingredients:
- Stir in the leek and milk mixture, steamed cabbage, mace, minced garlic, and cooked bacon (if using) into the mashed potatoes.
- Gently fold the ingredients together, being careful not to over-mash the potatoes. Season with salt and pepper to taste.
- Serve:
- Transfer the creamy cabbage and leek potato mash to a serving dish and enjoy warm!
