Japanese Curry Puffs
- Prepare the Curry Filling:
- In a pot over medium-high heat, heat a bit of oil and sauté the onions for 2 minutes until softened.
- Add the potatoes and carrots, and cook for 5 minutes, stirring occasionally.
- Add water to the pot and bring the mixture to a boil. Once boiling, reduce the heat and simmer for 15 minutes until the vegetables are tender.
- Stir in the curry mix and continue to cook for an additional 10 minutes, stirring occasionally until the curry thickens. Set aside to cool.
- Prepare the Puff Pastry:
- Preheat your oven to 350°F (175°C).
- On a sheet pan, roll out puff pastry and cut into squares (1 sheet should yield 4 squares).
- Assemble the Curry Puffs:
- Spoon a generous amount of the cooled curry filling into the center of half of the puff pastry squares.
- Seal and Bake:
- Place the remaining squares of pastry on top of the filled ones and press the edges together to seal, pinching or crimping the edges with a fork.
- Bake for 20 minutes, or until the pastry is golden brown and crisp.
- Serve:
- Once baked, remove the curry puffs from the oven and let them cool slightly before serving. Enjoy!
