Kohlrabi Salad with Apple, Bacon and Snow Peas
- Prepare the Salad:
- Slice the Kohlrabi: Using a mandoline, slice the kohlrabi into paper-thin rounds.
- Add Apple: Chop the apple into small pieces and toss it with the kohlrabi in a large bowl.
- Prepare Snow Peas: If preferred, shell the snow peas (or use whole pods if you enjoy them!); add to the bowl along with a handful of sunflower seeds.
- Crumble the Bacon: Finely crumble the bacon and mix it in with the salad. Refrigerate the salad while making the dressing.
- Make the Dressing:
- In a small bowl, mix the vinegar into the cream. Let it sit at room temperature for about 10 minutes until it thickens slightly.
- Whisk in the honey until the dressing is smooth.
- Dress the Salad:
- Add the dressing to the salad a little at a time, tossing until everything is thinly coated.
