Kohlrabi Salad with Apple, Bacon and Snow Peas

  • Prepare the Salad:
    • Slice the Kohlrabi: Using a mandoline, slice the kohlrabi into paper-thin rounds.
    • Add Apple: Chop the apple into small pieces and toss it with the kohlrabi in a large bowl.
    • Prepare Snow Peas: If preferred, shell the snow peas (or use whole pods if you enjoy them!); add to the bowl along with a handful of sunflower seeds.
    • Crumble the Bacon: Finely crumble the bacon and mix it in with the salad. Refrigerate the salad while making the dressing.
  • Make the Dressing:
    • In a small bowl, mix the vinegar into the cream. Let it sit at room temperature for about 10 minutes until it thickens slightly.
    • Whisk in the honey until the dressing is smooth.
  • Dress the Salad:
