Lemon Square Bars
- Prepare the Crust:
- Preheat your oven to 170°C (340°F) and grease a 9×13-inch baking pan.
- In a medium bowl, mix together 2 cups of flour and confectioners’ sugar.
- Add the melted butter and vanilla essence, stirring until a soft dough forms.
- Press the dough evenly into the bottom of the prepared pan using the palm of your hand.
- Bake in the preheated oven for 15 minutes or until the crust is golden.
- Prepare the Lemon Filling:
- While the crust is baking, beat the eggs in a large bowl until light and frothy.
- In a separate bowl, combine the sugar, baking powder, and 1/4 cup of flour, mixing to remove any lumps.
- Gradually stir the sugar mixture into the beaten eggs.
- Add the lemon juice and lemon rind, mixing until well combined.
- Bake the Lemon Squares:
- Pour the lemon filling over the pre-baked crust.
- Return the pan to the oven and bake for an additional 30 minutes, or until the filling is set and firm to the touch.
- Cool and Serve:
- Allow the bars to cool completely in the pan.
- Once cooled, cut into squares or bars.
