Lemon Squares
- Prepare the Crust
- Preheat your oven to 300°F (150°C).
- In a large mixing bowl, sift together the flour and powdered sugar.
- Cut in the butter until the mixture resembles coarse crumbs and is well blended.
- Press the mixture evenly into the bottom of a 9×13-inch baking pan, forming a firm crust.
- Bake for about 25 minutes, or until the crust is lightly golden. Remove from the oven and set aside.
- Add the Topping
- Increase the oven temperature to 350°F (175°C).
- In another bowl, combine the remaining ingredients (adjusting sugar or flavors to taste) and mix until smooth.
- Spread the topping evenly over the warm crust.
- Bake and Finish
- Return the pan to the oven and bake for an additional 25-30 minutes, or until the top is set and lightly golden.
- Remove from the oven and allow to cool slightly before dusting generously with powdered sugar.
- Serve
- Let cool completely before cutting into squares. Enjoy!
