Lomo Saltado

  • Prepare the French Fries
    • Cook the frozen French fries according to the package directions. Once done, set them aside and keep warm.
  • Sauté the Vegetables
    • In a large wok or skillet, heat over medium-high heat.
    • Sauté the onions and bell peppers until they are translucent, about 10 minutes.
    • Add the garlic and jalapeño, cooking for an additional minute until fragrant. Stir to combine.
  • Cook the Beef
    • Add the beef chunks to the skillet, along with cumin, complete seasoning, soy sauce, and red wine vinegar.
    • Mix well and cook until the beef is no longer pink, about 5-7 minutes.
  • Add Tomatoes
    • Stir in the tomato chunks, cover the skillet, and cook for an additional 5 minutes to let the flavors meld.
  • Combine and Serve
    • When ready to serve, gently toss the cooked French fries into the beef and vegetable mixture until everything is well combined.
    • Serve the lomo saltado over a bed of white rice, garnished with freshly chopped cilantro leaves.
  • Optional
    • Enjoy with aji sauce on the side for an extra kick!
